Lentil Spaghetti Bolognese
Ingredients:
Meat free mince (1.5 cups) / ½ cup green lentils, dried
1 can chopped tomatoes
1 carrot
1 onion
3 garlic cloves, minced
Spaghetti
Salt and pepper
Vegan cheese (optional)
Recipe:
If you’ve got a pasta ladle with one single hole in the middle, the hole is the typical portion size for one portion of dried spaghetti. You can use it to measure out how much to cook.
Prepare your vegetables:
Peel and slice the carrot in half, down the middle. Hold the sides together and slice all along the carrot.
Peel and dice the onion
Peel and mince the garlic cloves.
In a pan, heat some oil and sauté the onion, garlic and carrot.
In a separate pot of boiling water, add a pinch of salt and lay in the spaghetti. Push the ends in gently as they soften.
Using the same pan as the onion/garlic, add the mince/cooked lentils. Sauté until soft and translucent.
Pour in the chopped tomatoes. Let simmer on a medium heat for 15 minutes.
Serve over the spaghetti and sprinkle with vegan cheese if desired.
Top tip: use any leftover bolognese mix to stuff a pepper and roast it!
A Bite Out of Life
Meet Grace and Ffion: President and Sports Officer of our glorious Full-Time Officer team at Swansea Uni’s Students’ Union. The three of us and three other amazing girls made up the team of Officers and in February 2020, I organised a trip on behalf of the SU to Paris. We all got on really well so all 6 of us went for the weekend away; on our first full day we split up to do our own thing and reconvened mid-afternoon to have a catch-up on the day’s events. The girls had found a beautiful café in the galleries of the Louvre, Café Marly. We ordered hot chocolates and coffees and although it was probably the most expensive plain hot chocolate I’ve ever ordered (€8) it was also the richest - the French really do it best! Soaking up a beautiful sunset and taking in the atmosphere, we all enjoyed our drinks together whilst hearing the laughs of how the girls went zooming about Paris on the electric scooters and all the other French adventures we had got up to.
