Butter Bean and Basil sandwich
Ingredients
1/2 can butter beans
1/2 cup fresh basil (a generous handful of a bunch)
Sandwich fillers: cucumber slices, fresh spinach leaves, tomato slices, avocado.
Juice of 1/2 lemon
Salt and pepper
Recipe:
Prepare the fillings:
Bunch up the basil and chop into pieces
Drain the butter beans from the can and wash them
Slice open the avocado, remove the stone and then the flesh. Slice it.
On a plate, mash up the butter beans using a fork.
Squeeze in the lemon juice, salt and pepper. Mix well.
Add in the basil leaves and mix well.
Serve in a sandwich will all your classic sandwich fillers!
A Bite Out of Life
During our last week at uni, we were blessed with glorious weather in Swansea which meant every day we were outdoors doing something. Cliff jumping and swimming before work, barbecues on the beach, surfing, sunrise breakfast picnics, park walks, you name it. One of the days our house and some friends went surfing together; we had organised loads of food to take including two big trays of broccoli pasta bake that were nearly forgotten in the oven in the midst of our excitement as we were heading out the door - thank god they weren’t as not only were they so delicious we practically inhaled them in minutes but we were starving after all the surfing!
