Pancakes
A Bite Out of Life
In my final year house, we loved pancakes. Who doesn’t?! They’re so easy to whip up and versatile as each person can make them their own with their favourite toppings. We often had pancakes together and anyone that ever came round to visit: pancakes. We had a big Pancake Day breakfast and dinner together, our first lockdown breakfast was pancakes and would often eat them just because we could - a true house favourite. There’s something unifying about all digging in to a big pancake spread (and it always begins with the pancake song from Matilda).
Ingredients:
1/2 cup flour
1 tbsp white sugar
1.5 tsp baking powder
1 tsp cinnamon
Hearty pinch of salt
1/2 cup milk
1 tbsp lemon juice
Recipe:
In a measuring jug, combine the dry ingredients:
Flour
Sugar
Baking powder
Cinnamon
Salt
Add the milk and stir well until a smooth batter forms.
Add the lemon juice and stir well. Don’t be tempted to combine the milk and lemon together in one - you’ll ruin the milk! Let the mixture sit for 5 minutes.
Gently heat some butter on a low/medium heat.
Pour some of the batter onto the pan and let sit for a few minutes. You will notice the edges will start to solidify and bubbles will appear all across the surface of the pancake. When the bubbles start popping in the centre of the pancake, flip it and cook the other side.
Continue until all the batter is gone!
Top tips and notes:
The first one is always ugly. Don't panic, you haven't done anything wrong!
Make a big batch and freeze any you don't eat. When you want to eat them again the the future, just take them out of the freezer and pop them into the toaster to enjoy them.
Cook various pancakes in one pan - this will take you forever otherwise. Ain't nobody got time for that!
When adding the baking powder, try and sprinkle evenly over the flour mixture. If you dump it all straight in the centre, it's possible that even after mixing you'll get some super duper fluffy, but fizzy-tasting, pancakes and some flat pancakes.
