Chickpea Soup
Ingredients:
1 can chickpeas
1 white potato, medium
½ tsp rosemary or thyme
1 onion
2 garlic cloves
2.5 cups water
Olive oil
Recipe:
Peel and chop the onion and garlic. Drain the chickpeas from their can and rinse clean. Peel and chop the potato.
In a pan, sauté the onion and garlic in some olive oil.
After 4/5 minutes, add the potato. Cook for 5 minutes.
Add remaining ingredients and simmer for 20 minutes.
Blend when ready (cool completely FIRST before blending, otherwise the blender will explode under the pressure).
A Bite Out of Life
Meet my wonderful friend Lauren! On Valentine’s Day in 3rd year, very last minute we decided we were gonna go out for dinner and have our own Valentine’s Day celebrations as the only two singletons of the group. We called our local Thai restaurant, booked a table for before the couple rush and had the most delicious dinner together; we ended up meeting two other friends of ours sat on the table next to us doing exactly the same thing. On our way home we stopped off at Sainsbury’s to get an apple crumble, some custard, an orange juice for me and a bottle of wine for Lauren. We stayed in the rest of the night watching chick flicks eating apple crumble and drinking our favourites! Best Valentine’s Day ever? Without a doubt.
