Chocolate brownies
Ingredients:
2 cups flour
1 cup plant-based milk
1/2 cup brown sugar
1/2 cup white sugar
1 tbsp vanilla extract
1 tbsp maple syrup
¾ cup cocoa powder (or 1/3 cup cocoa powder and 1/3 cup melted chocolate)
½ cup vegetable oil
1 tbsp baking powder
1 tsp baking soda
Pinch of salt
Recipe:
Preheat the oven to 180°C.
In a pan, over a low heat, combine 1 cup of flour and the 1 cup of milk. Whisk constantly until it forms a thick goo and few lumps are present. Beware of it sticking to the sides of the pan: it’ll burn from the outside in and if it burns, you’ll have to start again. The mixture must be as smooth and lump free as possible, but nice and thick. Set aside once done.
In a mixing bowl, combine the sugar, vanilla, cocoa powder and vegetable oil. Mix thoroughly.
Add the chocolate mixture to the flour-milk mixture. Mix thoroughly.
Add the remaining cup of flour, baking powder and baking soda. Mix thoroughly.
Bake in a lined baking tray for 25 minutes.
A Bite Out of Life
Meet Reeve, one of my closest friends from school. Having gone to uni’s on opposite ends of the UK, opportunities to catch up in person were scarce but on this one day during summer we finally made it work. Lunch at Whole Foods is always a must together but we ended the day in a Pitcher & Piano on the Richmond Riverside. For the first and only (but definitely not to be the last) time in my life, instead of ordering dinner we only ordered desserts and fries to share. Brilliant decision and one I would definitely make again, 10/10 recommend.
