Beetroot and Orange salad
This is my third-year housemate Varney, a saving grace to me in final year. Veggie, got me into chickpea jalfrezi and nachos (neither of which I had ever really tried before living with him) and one of the kindest people I’ve ever met. He always shared food with me and in a house where everyone sort of just did their own thing, especially with food, that made a huge difference to me that year. One rainy Sunday in November, we had a house roast; everyone had a job and Varney and Jel, both being from the North of England, were designated gravy makers. Big competitions went down to see who had the best gravy - apparently it’s all a question of thickness. The roast just hit the spot, yknow! Definitely because of the amazing gravy. Ingredients:
1 orange
1 beetroot, cooked or steamed
Salad leaves (something with a kick works really well e.g. rocket)
Recipe:
Chop the beetroot into chunks.
Peel and slice the orange horizontally through the segments. Chop further into small pieces.
Combine the two together in a bowl.
Top tip: add a grated carrot for extra flavour and a different texture.
