Chocolate Oat Flour Waffles

Ingredients (makes 8 mini waffles, size pictured):

  • 125 g (1 cup) oat flour

  • 2 tsp cocoa

  • 2 tsp brown sugar

  • 1 tsp baking powder

  • pinch of salt

  • 1 tsp sweetener of choice (I use my “honey”)

  • 120ml (1/2 cup) milk

  • 1 flax egg

  • 1 tsp lemon juice

Recipe

  1. Mix all ingredients together until a smooth and thick batter forms. Let sit for 5 minutes until you start to see bubbles form. It’s likely it will have thickened - it should be thick but a little sloppy, so add a splash of milk to loosen the batter if necessary.

  2. Lightly grease your waffle iron and fry the batter until it’s all gone.

  3. Serve with yoghurt, fresh berries and your favourite drink.


A Bite Out of Life

One of my favourite things in life is when people share things with me. That doesn’t necessarily mean they have to give me anything: sharing the moment is enough and this was one of those moments. I was ploughing through an assignment in my room and I alwayssss work with my bedroom door open (distractions are welcome and I’m constantly hoping someone will come in and share something with me, and my flatmates often do)! On this one day, Jacob was really proud of the lunch he made and so popped in to share it with me. I felt like I was back in school doing Show and Tell as he took me through everything he had put together. He had put some cream cheese on a wholegrain cracker, spinach and blistered garlic tomatoes. It smelt delicious and was a reminder how sometimes the simple things in life are often the best. I enjoyed him bouncing into my room all excited to show me - I’m very much an ‘it’s the little things’ kinda person and so this was a real treat in my day.
