Blood Orange Crêpes
You can find my super simple 1:3 crêpe method here. Another pancake day must is also chocolate spread and I have another super simple 2-ingredient recipe for that here.
Ingredients:
2 blood oranges
25g dairy-free butter
25g sugar
Recipe:
Add the zest of 1 blood orange, the juice of 2, the butter and sugar to a pan.
Turn on a low heat and gently bring to a simmer, making sure the butter is melted and the sugar is well dissolved.
Simmer for 10 minutes or so, until it’s thick enough that if you run a spatula down the middle of the pan it splits/creates a visible path where your spatula has been.
Serve hot over crêpes with toasted almonds and melted chocolate (optional).
A Bite Out of Life
My flatmate’s girlfriend comes regularly on weekends to visit and one weekend just before Christmas she bought me this whopper of a pumpkin… Apparently her brother had decided to grow one in his back garden for the fun of it, but didn’t want to cook it and she thought “I know someone who would appreciate this: Nish!” and she was RIGHT! Me and my flatmate cut it open and managed to get 4.5kg worth of pumpkin flesh out of it… fresh, super soft and super orange. Legend has it we’re still eating pumpkin soup and curries to this day. The end is not yet in sight and thank God for freezers! Any pumpkin recipe suggestions, leave them in the comments below… anything and everything welcome at this point (please)!!
