Wild Rice and White Bean Soup

Ingredients:
1 large white onion
5-6 garlic cloves
2 celery sticks
2 carrots
5 large white mushrooms (about 150-200g)
2-3 tbsp dairy-free butter
1L boiling water, 1 veg stock cube dissolved inside
1 tbsp mixed herbs
1 tbsp smoked paprika
Salt and pepper to taste
1 tsp marmite
3 tbsp pearl barley
3 tbsp wild rice
270ml dairy-free cream
1 tin cannellini beans
Basil to garnish
Recipe:
Prepare all the veg: peel and chop the onion, garlic and carrots, slice the celery and mushrooms. Rinse the beans clear
In a pan, combine all the vegetables with the butter and on a low heat sweat until soft and aromatic (about 10 minutes).
Add the spices and cook for a further 2 minutes.
Add the boiling water, marmite and grains (wild rice and pearl barley). Stir until well combined, turn the heat down, put a lid on it and let simmer for 30-40 minutes. Check at 30 minutes to see whether the grains are done and then play it be ear!
Stir in the plant based cream and beans, garnish with basil in the bowl and enjoy hot!
A Bite Out of Life
The biggest blessing I had whilst studying for my undergrad, outside of my education, was the location I lived in. I lived in Swansea and having a life by the beach was unmatched. Our last week together saw a full week of beach barbecues, surfing, cliff jumping, sunrise swims before work, the lot. Here are some photos from our trip to Langland Golf Course at 5am for a breakfast picnic! We packed pastries, orange juice, a pack of cards, tea, coffee and fruit. We watched the sun come up, eat, drink and soak in our final few days together. I love a sunset, but there’s something special about a good sunrise that makes you feel that little more alive and excited. After breakfast, we walked back down to the cars, went home to drop off our stuff and then went for a quick cliff jump and swim before work… I had a 45min nap after our swim in the sun, all before 9am! These memories are my fondest and as always, with food right at the heart of them. Everyone was responsible for bringing something and nobody forgot anything (unlike the day that week we almost forgot our pasta bakes to go surfing!)
