Easter: Strawberry Lemonade

Happy Easter! It’s that time of year again where we’ve rapidly jumped from one holiday to the next, all desperately waiting for more sunshine and warmer days. Whether the sun has yet to make an appearance in your life, or it’s out in all its glory, I hope this recipe can help brighten up your day from your inside out. Raise a glass with this lemonade, propose yourself a toast for making it through a whole year of pandemic life.


Strawberry lemonade

Ingredients

  • 1 strawberry per glass

  • Bottled lemonade, enough to fill as many glasses as you’re making

  • Mint leaves to garnish

  • Ice cubes

  • Optional: gin (if you’re trying to have an EXTRA good day)

Recipe

  1. Wash and chop the strawberries into small pieces.

  2. With a fork, mash them to get as much juice out as possible.

  3. In a glass, combine the strawberries (and every last drop of juice off of whatever you mashed them on), ice cubes, lemonade and mint leaves.

  4. Serve chilled.

Note: I choose to use a sugar-free lemonade because the strawberries where I live are already quite sweet. Bear this in mind when picking a lemonade for your drink!

A Bite Out of Life

Sushi nights!!! Another house favourite… Top tip: if wherever you’re shopping you find sushi rice is really expensive, just skip the sushi rice and use risotto rice instead. It does the job. Hands-on ways to make food as a house was always guaranteed to be a fun night in together. We were very lucky that in Swansea there were various Asian shops all collected on the high street not far from our house, so things like bamboo rolling mats and nori sheets were affordable and incredibly good quality. We used to fill our rolls with barbecue baked tofu, sliced veggies (cucumber, spring rolls and carrots) and a mixture of both in one. Mango in sushi also tastes delicious! Maria had her own amazing way of eating sushi: instead of cutting a roll into pieces (because, effort), she would make one massive roll of sushi into a burrito, conveniently termed a “sushitto” and just eat the whole thing in one. Our verdict? Quite frankly, genius. With some spicy mayo on top, dunked in soy sauce: *chef’s kiss*. (According to the house, anyway… as you know, I steer clear of spicy foods. I know, I know, I’m missing out! I’ll miss out, that’s okay).
